SALMON WITH DILL AND FENNEL SALAD
INGREDIENTS (SERVES 4)
1 Huon blackened spiced salmon fillet
1 fennel, thinly sliced
medium bunch of dill, roughly chopped
1 tbs mayonnaise
1 lemon, zest and juice
Start by blanching the fennel in a boiling pot of salted water for 30 seconds to a minute. Transfer to a bowl of icy water. Strain and add the dill, mayonnaise and lemon juice and zest. Mix together and serve on top of the salmon.
