ADOBO SPICED CHICKEN SKEWERS
INGREDIENTS (MAKES 3-4)
5 Lenards chicken thigh fillets, diced
2 tsp smoked paprika
1 tsp chipotle powder
1 tsp ground coriander seeds
1 tsp ground cumin seeds
1/2 orange, zest and juice
handful of parsley, roughly chopped
large pinch of salt and pepper
Hillfarm canola oil, drizzle
4 tbs natural or greek yoghurt
handful of coriander, roughly chopped
1/2 lemon, juice and zest
Add all the marinade ingredients and chicken to a Glad snaplock bag and shake until the chicken is coated. Evenly thread the chicken onto 3-4 skewers.
Cook the chicken on a hot griddle pan. Turn the heat to medium once the chicken is charred on the outside and cook for a further 4-5 minutes on each side.
Put all the contents to make the yoghurt in a mixing bowl and mix until combined. Serve with the chicken.
