ORECCHIETTE WITH BROCCOLINI AND SMOKED SALMON
INGREDIENTS (SERVES 2)
250g Huon hot smoked salmon deli bites
small handful of Huon salmon caviar
1 cup Barilla orecchiette pasta
1/4 red onion, sliced
1 red chilli, sliced
1 garlic clove, fined diced
handful of broccolini, halved
3 tbs creme fraiche
salt and pepper
small handful of dill, roughly chopped
Cook the pasta in a boiling pot of salted water until al dente.
In an oiled pan over a meidum heat fry off the onion, chilli and garlic. Keep cooking until the onion becomes translucent.
Steam the broccolini for only 90 seconds. Transfer to the pan with the onion followed by the salmon and creme fraiche. Mix everything together in the pan and add the lemon juice and a pinch of salt and pepper.
Spoon the pasta as well as some of the pasta water into the pan and toss it together. Bring the heat up to high and let the water reduce a little. Turn the heat off.
Serve with the dill and caviar sprinkled on top.
