Put the zucchini, flour, milk, eggs and a pinch of salt into a mixing bowl. Mix everything together with your hands until combined. Mix in the coriander and parsley.
Place an oiled pan over a medium heat. Once the pan is hot spoon the mixture creating a couple of fritters at a a time. When the mixture starts to bubble flip the fritter over.
Mix the salsa ingredients together and serve on top of the fritters.
