QUINOA & WILD RICE SALAD

1 packet Huon Cold Smoked Salmon
1 cup wild rice cooked
1 cup quinoa cooked
1 cucumber deseeded and diced
1⁄2 bunch flat leaf parsley leaves torn
1⁄2 bunch coriander leaves torn
1 tomato deseeded and diced
2 spring onions thinly sliced
5 cherry tomatoes cut into halves
1 orange juiced
1 lime juiced
1 garlic clove diced
1 green chilli diced
1 tsp KEEN'S Mustard Powder
1 pinch salt
1⁄2 cup Hillfarm Lemon Infused Canola Oil
- Place rice, quinoa, cucumber, parsley, coriander, tomato, spring onions and cherry tomatoes and stir to combine.
- To make your dressing into a separate bowl combine, orange juice, lime, garlic, chilli, mustard powder, oil and a pinch of salt. Stir to combine.
- To serve, dress your grains with the dressing, roll the cold smoked salmon into cigars and lay on top of the salad.
