BLACKENED KINGFISH WITH AVOCADO DRESSING
INGREDIENTS (SERVES 2)
1 king fish fillet
Hillfarm canola oil
1 cos lettuce, cut into quarters
3 red radishes, thinly sliced
1 thick slice of Ashgrove herb and garlic butter
Hillfarm ginger infused canola oil
1/2 cup buttermilk
1/2 garlic clove, sliced
handful of parsley, roughly chopped
2 spring onion sticks, sliced
1 tsp ground cumin
1 tsp sweet paprika
1 tsp brown sugar
Blitz all the dressing ingredients together until smooth and set aside.
Transfer the spices to a bowl and combine with your fingers. Coat the fish in the spice mix. Cook the fish in an oiled pan over a medium heat for 3 minutes on each side. When the fish is almost cooked melt the butter and baste the fish.
To serve smear a spoonful of the avocado puree on a plate and then add the lettuce, radish rounds and fish on top. Drizzle with the ginger infused oil.
