DECONSTRUCTED MODERN CRUMBLE

1⁄4 cup plain flour
1⁄4 cup flaked almonds
1 tsp cinnamon
1⁄4 cup desiccated coconut
1⁄4 cup milk powder
100 g cold butter, diced
1⁄2 cup rolled oats
1⁄4 cup raw sugar
1 tsp salt
1 stalk of rhubarb, cut into batons
1 apple, peeled and cored cut in half
1 cup apple juice
1 tbsp Ultratex
Baby mint leaves
Whipped cream, to serve
- Combine the flour, almonds, cinnamon, coconut and milk powder in a bowl, add diced butter, rolled oats and raw sugar. Add a generous pinch of salt. Using your fingertips rub the butter into the dry ingredients.
- Place the crumble onto a baking tray and bake in the oven for approximately 25 minutes, at 180 degrees celsius, until golden and crunchy. Mix the crumble around every few minutes as it bakes for even cooking.
- Steam the rhubarb and apple until just tender. To make the gel, combine apple juice and Ultratex and whisk until smooth ensuing that it is not runny.
- To plate place the whipped cream on the bottom of the bowl and top with crumble, fruit and garnish with baby mint, and apple gel.
