MUSHROOM & BEEF PIE

- Prepare the mushroom and beef filling as per recipe listed in ingredients.
- Let the pie filling cool right down, add the chives and parsley and combine. Take one sheet of pastry, use the pie dish as a template and cut a large circle around the dish. Place the pastry inside the tin, pressing it down firmly, there will be a lot of overhang which will be used to help stick the lid to the pie. Scoop the filling into the pie, cut a smaller circle out of the pastry for the lid. Whisk the egg and use this to wash the edges, place the lid on top. Press and fold the edges cutting off any excess if necessary.
- Place the pie tin on a tray and put in the oven at 180 degrees for approximately 30-40 minutes or until the pastry is cooked.
