- Poach your chicken breast until tender then shred the chicken into small pieces.
- To make the chipotle sauce sauté the onion and garlic, add the chipotle chillies and, simmer approximately 15 minutes or until reduced.
- To make the avocado mouse, put into a food processor with the truffle oil, creme fraise and blitz until smooth.
- To serve top the corn chip with the avocado, shredded chicken, and top with micro herbs.
